Should I level 1 class to 80 and do all the others with the bonus exp or do multiple at once so I have more flexibility? I like being able to choose dps or heals for dungeons (my FC likes to switch it up) but the constant switching makes me feel like I’m not leveling efficiently.

Your friends can always do dungeons and content they've previously done, as long as it's a lower level than the job they wish to go as. You cannot do content you haven't yet done or unlocked, nor any content that is above your level.

It's just a means to replay the story. You can start from multiple different places including during the ARR patch quests. You can stop it at any time and save your NG+ quest progress, or wipe it or whatever you like.

OK say for the mechanic you spread around the boss in set clock positions. Your Position is North East. If the boss is turned East for the mechanic and you're doing Boss Relative, you treat East as the new north
And spread around the boss accordingly

If you want to become a Crafter it's recommended that you pick up all seven crafters (Culinarian doesn't use the same materials so you don't really need it) and level them simultaneously because you'll need materials from some crafter jobs for other crafter jobs
