6 months is more than enough time to hit current endgame and be basically max item level for at least one class or two
And even then max item level isn’t required, it just makes the first few levels of EW go by faster

Being able to play it is enough, you shouldn't ever run into a problem with an MSQ because you are the same level as the quest
Keep in mind though that there are a few spots in the MSQ where it skips levels, so it helps if you're ahead
the main one is the gap from level 46 straight to level 49

I'm new too so take it with a grain of salt - I don't think there's any drawback other than you're going to progress slower in the beginning and get some unlocks (Airships, Mount etc) some time later
But there's no outright penalty

There's nothing wrong with that, but it would help you out a lot if you got to the point in the story where you get a mount
because you'll still be able to ride the mount after switching classes and going back to level 1
