Which world should I pick?

DRG has almost no sks and they don't have haste buffs like the other three melees, so yes they usually play much slower
SAM goes quite fast, around 2.00s to 2.15s GCD, their aim is to have a looping rotation every minute to ensure their oGCDs get used on time

DRG meanwhile only loop their two 5-step combo, so it's fairly simple
although they have lots of oGCDs to keep track of

You didn't mention it but MNK is also pretty fast, up there with SAM. MCH is fast during its burst phase as it requires you to weave between 1.00 GCDs.

I just remember with Susano Extreme... I had to do it with Randoms first, and after about 6-7 hours of trying we managed to do it, then I got to use Party Finder for it, and the runs were much smoother.

If you have done all the Bozja Story quests up to Rank 10, then yes. Once the critical engagement pops up you just register for it.

Nope. It's 48 people in general for it. They can be solo or in parties. There's no job restrictions either so you could accidentally wind up with 48 DPS players. Doing FATES just makes the activation timer for it to appear get shorter.

I haven't played FFXIV in a couple months and was looking forward to come back, got my sub yesterday and all but I'm at lvl79 and only half of Shadowbringers done, for someone like me who has school and want to play other games as well, I don't feel like spending a lot of hours re-learning my rotation and finishing the last expansion.

So I thought why not leave that for when Endwalker comes out, that way I can really get into the whole thing again and at that moment I won't be doing school anymore so I'll be free by then.
But in the meantime I want to do something and I was thinking of levelling my crafting jobs and making gil till November, is there recommended guides/jobs to start with like blacksmith etc to make a good progression in gil making/easier progression for other crafting jobs?

In your duty finder window select the ⚙️ icon on the top left to open up the duty finder settings window.
Inside that window select the setting undersized party before confirming and entering the instances of your choice. NOTE: UNSYNC-ING AN INSTANCE WILL FORFEIT ALL OF YOUR EXP AND COMPLETION REWARDS.
