Getting to endgame takes a ton of time. Actual endgame you can play pretty casually and be fine. Savage/Extreme raiding is an option but isn't crazy hard if you're coming from other MMOs.

Okay okay so with this context I'll go through your points bit by bit
Outleveling MSQ isn't inherently bad so that's not that bad. All content is done across the data center so even if you aren't on Moogle for example you could still do content with people from Moogle and if you went to Moogle you'd still play with people not from Moogle. The only difference would just be the amount of French people you'd personally see in your world and so you might find it harder to find other French people on a non-Moogle server. As for the whole "less life thing" honestly preferred servers would be more active because there would be more new players there doing stuff since that is where you get funnelled into by default. It wouldn't be a bad pop in terms of total population either frankly and again server pop doesn't really matter anyway for reasons above regarding doing content data center wide
