You dont need to do the relic/armour inside eureka. If you want the elemental armour however you will need to work on the eureka weapon up to fully finished pagos relic

There’s a large variety of gear which inevitably has a few pieces with low supply but high margins

and if I'm in a rare situation where I would actually want to keep them on for a while, I interrupt that macro by hitting another macro

I can't speak on behalf of Wow to XIV comparison but any class works fine.
You can start as healer and do fine. Or start as Tank. Only thing with DPS is long queue times, which I am sure is no different in WoW.
