yeah. i would not choose a different server because you'll get overlevelled. you can just switch to a different job if you find one job overlevelled. it's a HUGE benefit that isn't talked about enough imho
so if you find yourself at level 60 on a mage job doing level 40 story quests, you can just swap to a lower levelled tank job to continue doing those quests

- do Eden raid (normal): there are three sets of four raids, you need to do them in sequence to unlock it all. Each sets have progressively stronger gear
- Eden raid (savage). This is gated by your Eden normal. This is more difficult but the gear is better. Don't do the first or second set for gearing.
- Dark Apocalypse (Nier Automata) alliance raid. This is an alternative to Eden normal. It has two raids for now. A third raid will be released on 5.5
- Extreme Trials
- Spend Gil to buy gear on MB. This won't give you the best gear but it might save you some time
