A poorly geared DPS can still do stuff assuming you're over the ilvl limit, a poorly geared healer will be crying from their lack of mana, assuming the tank isn't already dead

The main stats like vitality and strength and etc are always capped out on most pieces of gear so you can just directly tie that to item level for the most part
(unless you're using NQ crafted gear but the MSQ almost always rewards High Quality and/or Blue Rarity gear)

You can but you'll need to feed him thavnairian onions in a chocobo stable to increase his level cap
(max level 20)

When the choco reaches level 10, you either stable it and feed it a thav onion, or summon it and just use the item. It will increase its level cap to 11. You have to do it every level. There's two quests that offer thav onions, you can buy it on the MB or garden for it, and some FCs offer it to their members.
Also I recommend maxing out the healer tree first, especially if you run map or fate parties.

Any decent tank would have tank stance on and generate enough aggro that there is no way they could break away from them. Enmity generation has been simplified greatly in ShB and should never be an issue anymore.

Always keep your GCD rolling. Ideally you stand in the middle of the pack and spam holy. Obviously dodge aoes if you're in danger of dying as well.

gear types for each role isn't really broken down into cloth/leather/plate like in other mmos, for instance wow
While weaver is going to make most of the gear that white mage wears, its not going to make all of it
some pieces are going to be leatherworker, or armourer
it depends on the gear itself as the game leans a bit more towards realism
so if the outfit is mostly leather, but for white mage, its gonna be made by leatherworker
but the main reason why you generally want to level all crafters is: a, they all share gear so you save on space and b, most of them require intermediate mats from the others
i.e weaver will need leather from leatherworker and potions from alchemist, etc
