You gain additional dungeons through the 
MSQ, and you'll get more roulettes after you finish the 2.0 MSQ through 
blue quests.
You don't have to do any of the non-MSQ-related instances if you don't want to though.
There are also a few non-MSQ dungeons that you can unlock before level 50, but they're not required content.

Do you have the same issue when you're not riding your chocobo? With other mounts or just running your character around? There isn't an in-game resolution to the kind of issue you're experiencing, as far as I'm aware, but I don't usually see the shaking when I'm zoomed out on my mounts (I also have problems with motion sickness while playing games, but usually only in 1st person view).

My personal resolution to motion sickness in games is max zoom and have the camera angled to look down at my character at about a 45 degree angle.

Do dungeons! You'll get a card from the final boss of most of the leveling dungeons with fairly high probability.
You can also potentially earn cards by winning against TT NPCs located around the world.
