if youre that uncomfortable for it try running one of the starter dungeons (sastasha, tamtara, the mine one) just to get a feel for the role

Collectables are 'fake' items in that you can't use them normally, instead you turn them in for scrips at the scrip exchange in every major settlement, the higher collectability you get them to (Collectability score replaces the quality meter) the more scrips you earn. Turn ins also give pretty good experience.
The scrips are used for Master recipe books, some materiels, and levelling gear

What I do for having more enjoyment and do better at taking my time, is to do whatever I want to do, if I wanna level crafters one day, I do that, If I wanna advance msq other day, I do that.
And also, I do all side quests and never skip dialogs, there is SO GOOD plot in side quests, that sometimes it feels more in quality and quantity than the main plot

It does kind of take a bit of a incline towards the last expansion difficulty wise with some dungeons but it realistically isn't anything you haven't encountered before in other dungeons mechanics wise.

There are catch up mechanics in the game. So, basically the biggest gate is msq which is really just a time sink.
But, if you enjoy the story, enjoy it while you can.
As far as the anxiety, I wouldn't worry about meeting end game or it's reqs. We're nearing another content addition in December, so you do have time depending on where you are.

These patches from what I understand last a good few months, and given into account the practice you put into learning your class while leveling and going through msq, you should have an idea of how to play. The hard part just comes with optimization and learning the finer nuances.

you should do like the first 10-15 you see in your starting city to get some gil for teleports and free ilvl 5 gear for that one msq that says you need ilvl 5 gear but after than you can basically ignore all normal sidequests
i only ever do them if im like 2% of a level short of accessing the next dungeon or something

No, there are A, B, and S ranks from what I remember. Which you can gain rewards from. You can kill them at your own leisure
The problem is finding them. There is a specific discord server for that called Centurio Hunts
