which the i430/460 sets can be, so they can have more stats put onto them to make crafting the higher tier recipes a lot easier

All of the EU servers have a healthy english population, with Moogle having a bit more French players and Shiva having a bit more German players.
EU population is also well-rounded so picking a preferred server for the bonus experience is generally best.

my general suggestions are Marauder for tank, Conjurer for healer, Lancer for melee DPS, and Thaumaturge or Archer for Ranged DPS

The story will keep giving you level 50 gear as you progress through the 2.x patches
but you can spend Tomestones of poetics earned from level 50 content in Mor Dhona on Ironworks gear, which when upgraded is the best level 50 gear that's easily obtainable

not really, it's super simple. Just run level 50 content for tomestones to spend on gear.
You can do the Main Scenario roulette once a day for a big burst of 500/600 Poetics
There's a bunch of quests that unlock optional level 50 dungeons in Mor Dhona, and completing those give poetics alongside the bonus of completing them for the first time.

What’s the sense/way to use of Sharpcast (BLM)?
so I brought my BLM to level 80 and so far it’s really fun. However I’m still bad and very unexperienced so I was looking for some inspiration on the internet and it seems that a lot use Sharp Cast at the beginning. To my knowledge all Sharp Cast does is that it ensures that skills like Fire3/Thunder 3 procs.
Honestly I never thought of Sharp Cast to be that of a helpful skill and I rarely use it. But since a lot of openers/rotation seem to use it actually really helpful, I guess.

I was doing a little pocket math for gearing my alts with Eden's Verse tokens, and based on main stat it looks like 1x slot tokens are 50% more valuable than 2x slot tokens, which are 23% more valuable than 4x slot tokens, all assuming you discount the extra materia slot on 2x and 4x slot gear. Does that sound right, or am I horribly off on something? My takeaway is that I should prioritize filling my alts out with 1x token gear before moving on to 2x and 4x, assuming I want to distribute things somewhat evenly.

Road to 70 applies only on preferred servers. It's certainly possible to relocate your home world to another within your data center if you choose but you'll lose the buff.
Also I believe there is a probationary period where new characters are locked in to preferred servers for a set amount of time iirc

so ive tried a few times to get into this game. i usually buy an expansion, play it for a little and get tired of it rather quickly.
my problem is it seems very grindy, even for mmo's, which i've played about every one under the sun, including old school ffxi
you grind, the MSQ, you grind levels on other jobs because there's not a great way to level other jobs besides dungeon spam, you finally get 80 then you grind dungeons more for currency for weeks to get ilvl gear
what am i missing? why does it seem to take over a month to be able to "play the game"

One more anecdote that might be helpful when something like this comes up: it took me about 2 months of playing to get myself from the beginning of the game to the end of 5.2 and I went out of my way to do extra raids and dungeons during the patch stories

1: endgame is similar to combat classes. get your gear up, and also begin melding to meet the minimum stat requirements as indicated in The Balance
2: you can start to craft current endgame gear, or some more obscure or rare items to sell on the marketboard, such as glam/primal weapons, and more.
