So I'm new to the whole Ishgardian Restoration stuff, and I'm confused how exactly it works. Do I need a crafter to get anything done? It feels like all I can do as a Miner is go to the Diadem, which leaves me with a bunch of approved items in my inventory, and nothing to actually do with them.

They can't detect hardware injections like the solutions from AMD and Nvidia. That is done by the GPU itself and that is 100% undetectable, even when a gamedev uses an anti-cheat scanner on your PC. (That is why Nvidia Freestyle limits the reshade filters you can use for curated games, to prevent cheating with it.)
To answer the question: FF14 is an approved game for hardware color correction for AMD and Nvidia GPU's, so i don't think they will ban players with reshade in the future.

The issue is the gathering log shows the items you gather
But the items you craft with are the approved versions so the names are different

More side stuff becomes available as you progress through the MSQ. You could also pick a crafting or gathering job to fill the time.

You upgrade base classes into "jobs" at level 30.
But you can learn a new job once you've completed the level 10 quest for your first one.
White Mage starts as Conjurer in New Gridania.

Either sell them on the AH, or use Alchemy (or have someone else use Alchemy) to turn them into actual orchestrion rolls.
