The leveling process feels faster on your second run through with alts mostly because you’re already familiar with what to do. It isn’t actually faster but familiarity cuts down the perceived time.

That’s the target filter for tab target switching. It defaults to enemies/critical targets only, when in combat. You can adjust target filter settings in your character settings.

The game's fairly balanced so pick whatever interests you. That said, you can't play astrologian off the bat, as it requires you to have gotten to ishgard (expansion city) and scholar requires you to get to lv30 with arcanist (which is a dps) so your only starting option as a healer is conjurer/white mage
But astrologian, while no means a bad healer, does have a work a little bit harder than the other two to heal since its a bit of a jack of all trades, master of none while providing party dps buffs

White Mages are also "regen" healers, while Scholar offers shields instead.

My only recommendation is "do not overheal" use your MP wisely. It's not that hard to regenerate it, but it's best to always manage it wisely.

I see that there were trailers for the various post-ARR patches (2.1, 2.2, etc). However, at this point, how do I tell when it's safe to watch them? Is there a good listing of "You can watch the 2.1 trailer after completing mission <x>"?

You need to use skills that add Quality

you use touch skills to increase quality bar, which increases the HQ chance. And you use synthesis skills to increase the progress
by "use HQ items" it sounds like you're not crafting manually, which you should be if you want something to be HQ
