The only "1core" CPUs Intel has are Celeron or Pentium-branded CPUs. the lowest anything i3 in 11th gen was specced as was 2 core and that wasn't a desktop chip, but a mobile CPU. So maybe your dad's AIO desktop had a mobile CPU?

If you're trying to do a worthwhile upgrade for as cheap as possible it's hard to beat the system with the 12100f bc later on you could upgrade it to like a 14700k or something. By comparison, if you got the AMD on AM4 socket, the Ryzen5 4500 for a similar price to the 12100f performs a lot worse, but theoretically upgrading to the 5800X3D later would be better price/perf than the intel 13th or 14th gen.
