Likely because rainbow hair is an actual booru tag but has low utilization. Enough that the text encoder probably learned that it is a concept, but the UNET probably didn't learn what the concept means. Since you tried to avoid models that use booru prompting, it is likely just a rare case of CLIP actually being able to figure out what two words next to each other mean on it's own.
