So, there are actually multiple ways to breathe underwater. There's the turtle helmets, but they only give you ten extra seconds so it's kinda "meh". There's potions of water breathing, which are awesome and allow you to last for several minutes underwater before your air starts to run out, but require you to know how to make them, and potions can be tricky (plus you don't have any brewing stand, which makes making potions impossible). There's also the door method explained above, which is silly, but really does work, especially for the early game. Alternatively, you can brave the magma by crouching on top of it (holding shift), and the bubble column that comes out of it will replenish your air very quickly. Just be careful when standing on top that you don't get singed.

But the best method is enchanting your helmet with Respiration 3 (it won't stop you from needing air, but it greatly lengthens the amount of time you can stay underwater without needing air) and Aqua Affinity (allows you to mine underwater without any mining speed penalties), as well as your boots with Depth Strider 3 (allows you to swim and walk faster underwater, making it pretty much necessary for extended water mining trips).

Now that you have diamonds, next time I'm on I can show you how enchanting works.

dirt, gravel, and sand (soul sand too) can be trommeled

u can get gold/iron nuggets or even olivine

Olivine is the best fuel i think

highest chance is tromelling gravel

as a last resort, if you have no doors or ladders in your inventory, you can spam torches at head level using a nearby wall (hold the right mouse button)

it'll take a while for your breath to come back as the torch will be constantly removed, and you need 10+ torches to be able to do it seamlessly, but it's possible

it's saved me once recently

with aqua affinity, you could also mine a block above the ceiling (if the water has a ceiling and you're close to it)

Mining 2 blocks into the wall, and then mining up is another option.

There's also conduits for underwater bases

Well, vaults are a new block added to Minecraft in the Trial Chambers. Basically, you can unlock them with vault keys and get loot from them, but you as a player can only unlock them once, but they can be unlocked by an unlimited amount of players.

Is there a good way to like... unlock more recipes and obtain new mats? I'm unsure what all is still actually possible so it makes me unsure what to focus on

without server op commands, there's no way to unlock recipes other than just....exploring and obtaining new materials.

I see this, and am reminded of the massive symmetry builds I used to do in Fortnite Creative.

I built complex structures that twisted and turned in all directions, but it was all as symmetrical as I could get it, down to the finest detail as the orientation of each wall piece

you need a tool with the Silk Touch enchantment, otherwise breaking bookshelves just drop books and not themselves
