Even rdr2 really doesn't show well how horse riding should be, but keep in mind the setting for that game as well. Horses were used as vehicles, they were basically cars for the time, and in the game you just use them as ways to get around fast. You don't treat them like an actual animal in the game besides some surface level attention like feeding and cleaning, which I'm pretty sure is optional.

I like that in the remake of Metroid 2 by the end of the game the metroid baby actually acts like a companion and can bite through certain obstacles that were inaccesible during the entire game
