Should I wait until face recognition is done? I named about 30 people last night and today about 5 of them have lost their name. Face recognition will take about 3 days total.

Yeah currently a full facial recognition pass will remove names. It warns you about that if you go to start a new pass after they've already completed, but there's not a popup on initial upload.
To be fair 200k is quite a few images to process 😄 3 days is a good while, but best recommendation is letting it chew through that and then tossing the names on. I haven't had any issues with names disappearing via adding photos after the initial bulk upload has processed.
