I tend to love the unexpected, eerie, and somewhat edge of horror.
This, one of Dys's early offerings (his 11th share image) I love a lot because Einstein is also sort of 'made of balloons'. His hair, his fingers, he's all balloon!
And the background balloons that fill the world around him, we have organic chemistry shapes intermixed between typical toy balloons.
This is cool to me because we use balloons, and other odd toy-like objects sometimes, to represent bonds between atoms - not quite the physics that Einstein is so famous for, but a very close cousin.

For me, when I started using DALL-E for image generation, one of the first images I made was this. To this date it's still an image that I love because of the urgency it shows and yet it's a nostalgic art style found in old hand drawn cell shading animation movies.

Dys has posted a lot of striking images, can be a bit hard to choose. I'm a pretty big fan of physical materials, though, and so posts like this appeal to me greatly.

Dys is one of the greatest contributors in this community through digital artistry and being helpful to users with accurate info--so many generations are visually stunning, and on a wide array of subjects and in many styles, I think I'm most partial to the data viz and the nature scenes especially big cats so this is probably one of my favorites:
