Doubt about Payload and Next versions

Hi, I'm building a website which will go on production soon (2-3 months). Currently I'm developing in the latest payload version and latest next 16 canary version (that what payload docs suggests). I'm wondering if this is okay or should I switch to latest possible next 15 version. There are two scenarios:

• next will release soon stable version 16.2.0 -> which will be ok for payload
• next will not release 16.2.0 then I have to downgrade to next 15 stable version (it not a good practice to use canary for prod)

Where does it recommend in docs that you should use Next16 canary? The blank template currently uses 15.4.11.

For an live production side I'd recommend using next 15 stable and updating it to 16 once its recommended and used in the templates.
