Payload version upgrade

Hey guys. I’m new to Payload. Currently running version 3.65 and was looking to upgrade to the latest version. We made a custom dashboard so upgrading did break some stuff. Is it best practice to keep upgrading and disable features introduced with the new Payload version or just upgrade when maybe there is an actual need to do so?
