How to install a specific version of Payload?

Hello all,

I'm new to Payload and need to install a specific v2 version and don't seem to find instructions on how to do so. I figured the create-payload-app would have an argument, but it seems like it doesn't. Then, I though the version number would correspond accordingly, but I don't see 2.*.* versions released, so I am not sure how to install the latest stable v2 version for Payload.
