How to log access and system logs?

I'm using the Payload CMS multitenant option, and the docs do mention that it uses Pino as the logger, and there's a loggerDestination option as well but i'm not able to get it to put the output to a log file. Anyone know how to approach this?

What have you tried? Did you look at the Pino docs for logging to a file?

I've tried implementing this but not getting any any logs written on the destination file.
