Tips for improving payloadcms performance?

Hi, We're running into long response times (30s+) on the REST API for our payloadCMS project now that it's under moderate load. I understand a lot of performance optimizations will be project specific and depend on what we're querying but is there a performance checklist or simmilar resource for making sure the basic are in place?

More detail specific to our case:
We're running payloadcms on a fairly beefy OVH bare metal server, with utilization barely hitting 15% currently.
Database is an M10 on cloud.mongodb.org, with the provider being AWS and the region our local one, with queries rarely exceeding 500ms
