To avoid monotony and boredom from seeing the same zombies here and there over and over again, what if they were generated randomly like fauna in no mans sky or bosses from the remnant games? With several quality presets you could generate thousands of different zombies (I'm only talking about the way they look (gear and appearance) this way you would almost never see the same zombie twice which feels fitting since if it were a real occurrence, the only acception would be twins an such.

they are already going to be a bunch of different zombies you can see in the videos ardem has posted online. they are fat ones skinny ones and even ones with clothing and rotting ones that you can see on the offical ardem youtube. they will be no shortage of that so don't worry.

There's definitely going to be some repetitiveness to certain aspects and I'm sure zombie looks will be one of them, but from what I've read there will be a vast amount of different zombie types/looks. Unfortunately it's really just not possible to have zombies look different on a per zombie basism they'd have to create each look and if you're asking AI to do it, then things can get messy real quick.
