My only goal is to have evrry character, and being able to build them with artifacts, to test different team comps etc.

Just for testing characters and artis, you can play any you want.
The implementations for artifacts and character abilities is generally the same across all versions, so nothing will change if you pick one over another.

I know that for exemple on 5.1, upgrading artifacts doesnt work.

5.1 would be one of the worst versions to pick overall for anything, both 5.0 and 5.4 are better
Upgrading artis is the same in all versions of GC since the implementation does not change and hasn't, what you're seeing is an issue with protos.
Your post made it sound like you just wanted to use the artifacts that you wanted
If what you actually want is for normal farming and dungeon functionality, then go to 3.2 or earlier, or 4.0. You will have problems with doing multi-wave dungeons regardless of version. If you want everything to work then switch to GIO instead of GC.
So to answer specifically

All of them. Whether or not you have the right protos for whatever version you pick is a different story. If you don't want to touch any of that then as above, go 4.0 or earlier than 3.3.

protobufs are what make the packets work properly for a specific version
to change version it's just protos that change, the source code remains the same

if you were going to do anything with fixing protos then you would get the protos and make appropriate fixes, but that's not something I would expect the average person to do
if you want to use an older version just download the appropriate version of gc and game

Start by looking at some older threads talking about fixing them, there's a lot of info.
If you are fixated on upgrading the artifacts and not just giving them to yourself with the stats you want already at level 20, then either 5.4, 5.0, or 4.0 would be the ones to try. Or earlier than that if you want more to work, but once you get to 3.2 just switch to GIO instead.

Yes I want to give them to me at lvl0, upgrade them, then equip them. ill probably play 5.4 then.
