When I press a key on the Keyboard, a random setting is toggled, this is a fresh install of FL Studio 20.
Keyboard is the CASIO ToneBank CT-700
All the Channels for MIDI are set to 6, including the keyboard.

This looks like you have a channel set for Omni preview. (Ie the keyboard is set to channel 6, omni preview is probably on 6 as well.)

You can change the omni preview channel in the MIDI settings:

Now how do I get it setup to play in a soundfont rather than only one key be played from the selected track

Just select the soundfont in the channel rack and play

it plays a single note like it did with the drums and nothing else
