Well salzstangen is not pastry based dough they are normally brioche or normal Crunchy Bread dough based unlike a Croissant

Do the water test! Heat your pan on medium for a few minutes allowing to reach 375–400°F. When the water bead effect happens, you're good to go!

Chocolate Baguette

Conchas Recipe:
Ingredients:
300g Bread Flour
125ml Warm Milk
50g Unsalted Butter
40g Granulated Sugar
5g Dry Yeast
5g Salt
1tsp Vanilla
1 egg
1 egg Yolks
Shell:
60g Unsalted Butter
150g AP Flour
Pinch of salt
75g Granulated Sugar
15g Cocoa Powder
1tsp of Food Colouring(Red)
1tsp of Vanilla
Instruction:

Mix the all the wet Ingredients and add Flour, salt, Yeast, sugar, Vanilla and Mixing it.

Then slowly add some Room temperature Unsalted Butter and keep Kneading Until nice and Smooth.

Cover them and let it rise for 1hr or Until double in Size.

Punch the dough to remove the air Bubble and divide the dough into 7 equal Pieces and shaping into a Round Ball Shape.

Let it chill for 15min.

For Shell, in a Bowl add Unsalted Butter, sugar and whipping nicely then add AP Flour slowly and keep mixing until turns into Nice Cookie Dough that not stick to your hands And add some cocoa powder and another side, add food Colouring and mix them up.

Let it chill in the fridge for 30min and roll yhem up thin layer and use your Round Cookie cutter and press them down and top it into a Dough.

Scoring a Shell shape with an knife and let it rest in the warm place for 40min.

Preheat the oven 180°C and bake it in the Oven in 170°C for 16min.

Let cool completley and Enjoy.
