upgrading and acquiring new depot nodes in future wuling updates will give us new stock items with higher potential peaks (5k and 5.4k), but the initial 4 items will still have the same ~4.7k peak
upgrades may very slightly increase the range cap (hypothetically speaking, for the benefit of the doubt), but it likely still wouldn't hit 5k either way so it's not worth holding/stockpiling just for that

this will only be so if it works the same as how valley 4 progressed, which I think is a fair assumption

@west vale regarding v4 elastic goods reaching 5k, you might be thinking of either hydroculture fillets or unity syrup. they are indeed Hub products, but they are not part of the starter 4
of course, prices can be volatile enough to maybe let a low peak good spike to 5k. I've yet to see one and don't think it can happen, but feel free to prove me wrong if you have a screenshot

Avg. peaks (for selling) are low on mon-wed (3k~4k), much higher on fri-sun (4.7k~5.4k)
Avg. floors (for buying) are high on mon-wed (600~1k), slightly lower on fri-sun (400~800)
so try to hold off bulk selling/buying during the first half of the week
tho you'll still need to buy throughout the week to not overcap purchase limit
there will be outliers. don't miss out on a good deal just to follow a loose rule

Some notes:
Item price peaks seem to be determined by unlock progression (Low Peaks are the first 4 Hub elastic goods, Mid Peaks are mostly Science Park goods, High Peaks are mostly Lodespring goods)
This means that the current Wuling goods at Low Peak will presumably remain Low Peak even after we upgrade/unlock new Wuling Stock Redistribution Terminals. The new goods unlocked will be the ones with higher peaks
If this ends up not being the case, don't @ me

I might try to do a distribution graph of my friends list on a high volume day to confirm my hypothesis that prices on any given day form a normal distribution where prices above the soft limit (4.7, 5, 5.4) are likely to be of sufficiently high standard deviation from the mean price that having one is rare. Should I do it for non-high volume prices as well?

If you open the elastic good page and see the item infos theres 3 types

Medium, large and massive price fluctuations

These corresponds to our tiering

like murlock said, once you know the price tiering you can also quickly tell which is which in game by checking the item description
moderate, large, and massive price fluctuations for low, mid, and high peaks respectively
