Yes, but that's another layout. For a layout like this I don't see how to fix that. If a day only has one photo, what else should be displayed there? Other photos from other days? Makes no sense.

Yeah, so you ask for different layout options. That's something completely differnt than asking to change the existing layout in a way that doesn't make sense.
Quick solution: Just take more than one photo each day.
