It'll remain mirrors even if swapping is easier. Mirrors aren't because swapping is restrictive its a natural occurrence of meta and the limits of time.
You can only practice and plan so much, only so many hours in a day. When a comp is viable in a large majority of situations it becomes an advantageous point of time spend because it gets the most value out of the time you spend on it. Planning and prepping for a million variables tends to be ineffiicent and leads to a team that may be flexible but is not practiced.
There was a great discussion about this when it was talking about why there weren't Goats (3:3) counters.
And its because the time needed to devote to those counters was not always worth the time you could spend practicing a comp that worked everywhere.
So the mirror evolves because for both teams practicing [x] comp is just the most efficient use of their time without overworking their players.

You're looking at it in a mathematically vacuum like a reddit post, not via implication. In this situation we're applying it to a potential stall. The Mei now getting ult in 45 seconds, even after losing threat of EMP, instead of 80 means that she can charge an ult in one push and delay instead of two.
It greatly favors the defense side and provides faster ults (in those delays) for a larger chance of defensive victory.
The overall ults used become the same, but the impact rating of said ults are skewed greatly.
For instance apply this to Hanamura B.
Where even just one or two picks ruins a push in stall because the run back is so long.
The matter is more the impact on when the Mei switch for a stall occurs.
It's still a 45s versus an 80 second Blizzard.
You're just attempting to justify it because the total time, partially on Sombra, is the same.
But the impact is much different.
