I ran a game yesterday in masters where we had that lineup and eventually the enemy team swapped to a zen and reaper. We made it apoint to dive the zen to lock him down, and then just shut down reaper.
If reaper did manage to take a tank down, I'd simply res. I always had res up for tanks because they simply had so much health to down, by the time one went down, I had already recovered res
and with all those tanks taking damage, I had a constant ult charge, so I could pull off double and triple resses if needed
When I ult with Mercy, I also try to focus damage boosting
This means when her ult ends and most of the team is lit, I can instantly build my ult charge back up on those tanks
otherwise they'd be fully healed through the battle and my ult would end, resulting in me slowly building ult again

some go for flexibility
there's dps players like TVIQ with a really wide pool of heroes
i think in dps most teams go for one hitscan guy and another projectile/tracer guy, one main tank (winston/rein), one off-tank if maybe a flex to dps

outside of that, like in ladders they play a wider variety.
surefour and tviq have a big pool of heroes
