What does the upgrade process look like from going to 3 to 5?
Should I just follow these instructions (https://www.prisma.io/docs/guides/upgrade-guides/upgrading-versions/upgrading-to-prisma-5)
Or should I follow the Upgrade to 4 instructions, and then follow 5?

I would recommend first upgrading to Prisma 4 and see if you are affected by any breaking changes:
https://www.prisma.io/docs/guides/upgrade-guides/upgrading-versions/upgrading-to-prisma-4#breaking-changes
If yes, you can first make those changes and then upgrade to prisma 5.
