That's going to vary wildly between games, but a good place to start would be the Dolphin emulator. Just open Dolphin and browse to the directory where the .ISO is, right-click the game in Dolphin's list of games, click Properties, click the Filesystem tab, right-click "Partition 1", click extract and then look through the files for what you need.
