Trying to understand beginner tools for custom mobs

I'll just start by saying that this is a datapack server, so it's unlikely that you will get much help with modding. But you can wait and see if anyone knows the answer

For me Geckolib + MCcreator worked the best, I used tom make mods with it and it was pretty easy
