That's a pretty broad. In general, Android phones, tablets, etc can all usually be in varying states of vulnerability

Each manufacturer tends to "own" the responsibility to push out patches for their platform. So Android devices that are sold directly by Google potentially have the most up-to-date patching and other manufacturers tend to be a mix and match

Usually starts with trying to get as much information about the Android device as possible

And then you can usually assess what kind of vulnerabilities it might be suspensible. A lot of the time you can find out a bit of information about the device if you can get it to browse to a site you own and grab the user-agent

If you're on the same network as the device, you can usually do a scan too to varying degrees of success
