Would be nice to be able to attach Skimmer to dock instead of only ship.

I’d make a couple and leave them around.

Or maybe have a dock that it gets sucked into the back of the ship???

There's a spot with no equipment opposite the fore anchor. Good place for a davit.

Well, given that you've now got the craftable mooring point (I can't remember which skill level unlocks it) which you can put anywhere, there's no reason why you can't do this.
