Did you install the full game and attempt to run that rather than the demo install, before you uninstalled and refunded it?
Likewise, did you try to use your save from the demo, in the full version? I've read that demo saves are incompatible, which may be the cause of your issue? 🤷♀️

I purchased the game from steam, uninstalled the demo, installed the game, created a save on a new slot.

You need a pc with a proper GPU. The demo doesn’t have all of the mines and sharks in the ocean that the normal game has.
You also have to make sure the game is using your GPU and not trying to CPU render everything.
I’ve had a few friends play the demo and then can’t play the full version due to the GPU thing. One even went and bought a decent laptop to play as his didn’t have a GPU beyond the integrated graphics
