you need 5k hours and 5k miners working at the same time.
if its gonna make you feel safe, you can finish the story with just the beginning area veins.

Those depeleted after about 10 ingame hours. Limestone seems to deplete much faster than iron/copper

There are so many other ways of getting limestone so it is okay for it to get depleted. There are also many other big veins for that.

I mean, it is a lot. It is truly a lot.
Right now I am drowning in bars, and the components you make out of them.
And I didn't get any iron or copper bar depleted or even close to it.
It would take months for you to deplete all the veins in a casual play.

Could be because instead of making it indestructible, its "hardness" value is just set incredibly high in order to make it functionally renewable
