If you link just 1 player instead of 2 does it still do that?
Are you linking to the humanoid root part?
What happens when you do it on client
What's wrong with that?
I watched it about 5 times to the end
What was not happening correctly
OK then instead of welding the part to each player
Simply place the part in the middle without welding
There are many ways to make it but maybe the server places the part in the middle of the 2 players and the client makes sure they stay close to it with a little wiggle room using IK to move the hands

Each player only moves there own character to stay close
This can be done using simple setting the characters cframe

It will if you only move them after a certain distance
Maybe there allowed 3 studs
But if they go further then 3 studs stop them from moving any further
Right the player has to stay within 3 studs
And the server keeps it in the middle
And you use IK to make it look nice
