I haven't seen this one posted yet. It's hard to do and you really have to be trying to get it but I figured I'd post it.
I've really only gotten this to work on the Ifrit, If you go **over Mach 2.0 well into the overspeed territory and get clobbered by a missile that somehow doesn't kill you, you get this:
After about 5-10 seconds of plummeting the plane unloads into an LOD, the cockpit unloads as well. It only seems to happen when the first person camera becomes "Detached" and freely spins around in the cockpit. It's really hard to replicate, I tried to do it more than once and it took forever. (It's mostly down to the missile hitting you and breaking the cockpit off)
