I see many people install it this way. I also see there is a Proxmox Helper Scripts from tteck to do just that.

But I'm encountering issues with my install and it seems others do too

I installed CasaOS on a Debian 12 in a VM and my problems (mostly apps that wouldn't install) disappeared

CasaOS is a GUI for Samba and Docker, so if you're installing apps via CasaOS running LXC container, you're essentially running Docker containers inside an LXC container. It's not impossible, but I'm not surprised you were having problems.
