i dont know anything about metahuman, but you cant bake a texture into an FBX. You need to export the textures as separate images and add them in your shader in blender.
As far as hair goes, it really depends on how the hair is made in metahuman. Blender uses geo nodes or particle systems for hair. You cant bake this into an FBX file. You'll likely have to recreate the hair in blender. Search up using the newest hair system (geo nodes)
unless of course the hair is exported as a mesh but it sounds like that's not the case

There is a reason why its so hard to export anything and especially metahumans from ue to another software. Unreal doesn't want and does not allow you to render them in any other application besides unreal.
