It would be easier to see what ones you fully completed and probably look nicer, example in screenshot sorta

I agree it would be nice to have a UI indicator - or maybe "minimize" them or show / instead of the categorical numbers - but your color selection isn't good for people who suffer from certain types of colorblindness. I cannot see any differences in the color bars except for a slight deformation on them where I'm assuming you made custom edits.

Maybe some sort of gold colour that has a neat metallic animated sheen to it.

maybe just some check just after the name , or before the numbers, could be pretty simple to add

I would personally say I don't need another color on these, but if we say there should be one on 100% completion, I would personally keep the gold color for the very end and implement another line of color before gold instead.

Maybe it would be easy to tell if not the color of the achievment tab itself would change but rather the color of the brown box around it?

Or that number progress (for example 62/62) can be replaced with something like COMPLETED, so you don't need to look at it ever again.

You don't need to look at it ever again..unless there are more achievements added to that category like happened this update.

About colours, yeah, maybe change into different colours when the category is fully completed

It would also be helpful if completed categories are dropped to the bottom, maybe with a nice separator to the uncompleted ones. That way I don't have to scroll past them or continue scrolling after a point.
It would also help with categories that get expanded, as they'd jump up again.
