Of course I can manually drag each piece manually, but when I've cut up a project into pieces that number in the hundreds, dragging each and every one after I've made a cut gets pretty time consuming. Is there any way to get Audacity to automatically connect each piece end to end?

you can try joining all of the clips and then using truncate silence.
Other than that, I dunno of any way to do that and I've actually had issues with it as well.
