My argument isn't that stats are solely how you fight enemies dingus, my point is that stats define what you can and cannot wield, what your build's weaknesses and strengths are.
You literally cannot wield a weapon properly without the proficiency requirements. You can't be a decent caster with stupid-low FP.
You can't survive oneshots consistently without high VIG.

But with softcaps all met in every stat, you can literally use anything; be any build. You don't have to respecc. You don't have to make any choices and sacrifices to meet your goal...

Stats are the basic framework upon which all else is set.
Pumping a few stats to their softcaps and dumping others is how builds work.

To have diversity in builds you need to be able to have these choices.
You could evenly distribute all stats in the same level range as such builds, but doing so makes you a master-of-none.
It's a build, yes... Because there are other options.

I wish you could just kill Ranni and become the moon lord, most times by the end of her questline you should reasonably be able to kill her, you are basically a god in your own right and she trusts you enough to let her guard down
