Probably that with proper organisation, there's no real need to at all. The categories are laid out well and, like everything else, can be collapsed and muted.
There also isn't any channel on here that really needs the filtering that it provides (e.g. politics and other "serious discussion" channels). This is a rather focused server with very little that's off-scope of the games outside of #general, #ty-john-cena-golfie-not-e3-raiders, and #blank. Actually, those might be the only public channels that are unrelated to the game series.
It also means that no-one ever runs into the issue of not being able to # a channel, conveniently.
