Hello,
today I had a Windows Server 2019 with SnapCenter Server 6.0.

Can be deployed on Linux? Which linux? Ubuntu?
Are there some doc about how to install it?

Also if I remember correctly: If you install SC server on Linux you won't be able to backup Windows-based systems (MS SQL, Exchange, etc)

The SnapCenter Server installed on the Linux host does not support:

High availability

Windows plug-ins

Active Directory (Supports only the local users, both root and non-root user with creds)

Key based authentication to log into SnapCenter
