I have setup a few StorageGRIDs where everything from provided from NetApp, and it was "just" a storage node (pizza server) and an E-Series (E2860) connected via FC... When you setup the StorageGRID it then runs some scripts to configure the E-Series with LUNs etc.. which is quite clever. My question is if the same can be done if you were to configure your own "original" E-Series and your own pizza server storage node? Will the software see that there is an E-Series connected, and then offer to configure it for you? Or do you have to do this yourself?

To the best of my knowledge if you want to byoh you need to do a baremetal setup using docker or podman.
I've done this a few times and its fairly easy
