it really depends on what you are familiar with or comfortable with.
Personally I have a couple of different distros that I stick to for one reason or another.
Ubuntu being the primary one, because it's everywhere and fairly easy to work with and use.
Second is Redhat, corporate function/use and need to know it for most work I do.
Personal, Manjaro.
If you want to get into other distros look into:
Kali
Alpine
Flatcar
Mint
etc, etc.

+1 for Manjaro. I especially like the updates, they are faster than any apt- or rpm-based distro I know. Also, it's on a rolling release so you get new stuff quicker
Pop OS + VSCode using containerized instances of whatever with ansible installed. It allows you to switch distros (and releases) and test super easy. For example, my group's primary distro used for projects that don't have a vendor/application defined requirement was CentOS. We moved to Ubuntu. I personally use Debian or Fedora as much as possible as host OS (bare metal or VM) because it provides CockPit.
