Now that my clusters are all 9.12.1, do I still need ZAPI or can/should I disable the collectors?
I currently have as default:
collectors:
- Zapi
- ZapiPerf
- Rest
and then in each cluster, Have Ems added.

I also find it odd that I don't have RestPerf...

I would also wait to move to RestPerf until you've upgraded to a version of ONTAP with this fix https://burtview.netapp.com/burt/burt-bin/start?burt-id=1585893
